Method of preparation:
Divide the yolks and whites into two separate bowls. Add the sugar and vanilla to the egg whites, beat until you get a thick cream. Beat the yolks with the oil and add the protein mixture. Stir gently and set aside.
Sift the flour, add the baking powder and a pinch of salt, pour in the egg mix and stir until the products are mixed. Pour the dough into a greased and floured cake tin, preheat the oven to 180 degrees and bake for 40 minutes. Cool and cut the tops into two or three pieces.
Prepare the cream by mixing the butter with the powdered sugar, cream and beat until smooth. Cool the cream and fill part of it with a syringe of your choice. Take a suitable tray, put the first loaf, syrup it with compote juice and spread cream. Arrange sliced dried peaches on top and cover with the second sheet.
Smear it with cream, decorate with a syringe in shapes of your choice and decorate with slices of peach, frozen fruit and fresh mint leaves. If you want, shape as shown in the photos. Cool the dessert, cut and serve.
