Required products :

for quinoa pancakes:

  • 1 1/2 teaspoons of quinoa flour (ground quinoa) and buttermilk
  • 1 teaspoon baking powder
  • 1 tablespoon crystal sugar
  • 1 1/2 teaspoons cinnamon
  • 2 eggs
  • 1 teaspoon vanilla (extract)
  • 2/3 tea cup yogurt

for the jam:

  • 2 teaspoons raspberries
  • 1 tablespoon sugar

Method of preparation :

Prepare the jam - put the raspberries and sugar in a saucepan and simmer on low heat until the sugar crystals melt and the liquid is reduced.

Mix the dry ingredients for the pancakes and make a well in the center, in which you pour a mix of pre-mixed buttermilk, eggs, vanilla. Stir in a bowl to obtain a thin dough.

Bake them in a pan, adding 2 overflowing tablespoons of the dough for each pancake. Bake the whole amount of dough on pancakes, and keep the finished ones warm in an oven preheated to 50 degrees and turned off.

Serve the pancakes with yogurt and raspberry jam.
