Necessary products:

 

  • 300 grams of cooked rice
  • 150 grams of grated mozzarella
  • cumin and black pepper
  • 1 grated onion
  • 2 sprigs of fresh oregano
  • 2 sprigs of fresh parsley
  • 3 broken eggs
  • 100 grams of mozzarella, cut into cubes
  • 1 teaspoon flour
  • 3 broken eggs
  • 1 teaspoon breadcrumbs
  • frying fat

 

Method of preparation:

 

Put the rice in a bowl and add the grated mozzarella and onion. Season the mixture with chopped oregano and parsley, black pepper, cumin to taste and add salt. Put the eggs and mix until homogeneous. Scoop with a spoon, make a ball and put a cube of mozzarella in the middle.

Shape well on all sides so that the cheese is sealed. Dip each rice croquet in flour, then in beaten eggs and finally in breadcrumbs. Fry in hot fat, drain and serve with garnish and sauce of your choice.
