Required products :
- 1 medium eggplant
- 1/2 teaspoon salt
- 1 teaspoon breadcrumbs
- 1/2 cup grated eggplant
- 1 egg white
For the milk sauce :
- 1 teaspoon yogurt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Method of preparation :
- Preheat the oven to 220 degrees and cover the bottom of a large baking tray with parchment paper, then grease it with oil.
- In a clean plastic bag, mix the breadcrumbs with Parmesan and mix well.
- In a bowl, beat the egg whites until lightly foamy.
- Wash the eggplant well, cut it into thick slices and then into 4-5 sticks.
- Dip in the beaten egg whites and place them in the bag with the breadcrumbs and parmesan.
- Twist and gently shake to cover evenly with the mixture.
- Arrange the eggplant sticks in the pan without overlapping.
- Bake for 15 minutes until golden brown. Turn them every 3-4 minutes.
- Meanwhile, prepare the milk sauce by mixing the ingredients in a small bowl and mixing well.
- Serve the "breaded" eggplant warm, garnished with garlic sauce.
