For easier portioning, it is better to use not completely thawed fish. Cut it into two pieces about 2 centimeters thick.
Using a sharp knife and scissors, carefully remove the spine and all bones.
Drizzle the salmon with 1 tablespoon of soy sauce, then lemon juice and leave to marinate.
During this time, peel and cut into small cubes garlic and onion, then fry them for a few minutes in vegetable oil (until they become transparent and release their aroma). Then add the finely chopped mushrooms and fry for 2 minutes, stirring.
Pour the remaining two spoons of soy sauce into the bowl with the mushrooms and onions, stir, sprinkle with black pepper and after a few minutes remove the pan from the heat. Allow the filling to cool slightly.
Grease a pan with oil, put the fish in it, forming circles. In the free space that is formed, distribute the mushroom filling and sprinkle with grated yellow cheese.
Place in a preheated oven (200 degrees) and bake until the surface is covered with a yellow crust (about 20-25 minutes).
Serve the salmon hot with a garnish of fresh parsley leaves.
