How To Cook Sausage With Cauliflower And Parsnip Puree - Recipe

Required products :

  • 200 grams of parsnips, peeled and chopped in bulk
  • 500 grams of cauliflower
  • 1 tablespoon olive oil
  • 2 small red onion heads, thinly sliced
  • 2 sprigs of rosemary, chopped
  • 1 tablespoon flour
  • 1 cube of beef broth dissolved in 375 milliliters of hot water
  • 8 wages
  • 300 grams of frozen peas
  • 100 milliliters of milk
  • 25 grams of butter

Method of preparation :

Boil the parsnips in salted water for 15 minutes, then add the cauliflower and cook for another 5 minutes. Drain and leave in the hot pot on the still warm stove to dry from moisture.

Meanwhile, heat olive oil in a pan and add onion and rosemary, fry for 15 minutes, stirring occasionally. Sprinkle with flour and after a minute pour the broth. Stir to dissolve the flour and cook until thickened like a sauce. Season to taste and set aside, keep the sauce warm.

Put the sausage in a greased pan and bake for 16-18 minutes, until done.

Blanch the peas for 3 minutes in boiling water and drain.

Mash the cauliflower and parsnips, mix them, add the milk and butter, make a puree.

Put it on a plate, add sausages on top and pour the sauce.
