Required products :

  • 3 tablespoons butter
  • 1 carrot, 1 onion and 1 stalk of celery cut into cubes
  • 1 teaspoon salt
  • 1 clove of garlic, chopped
  • 2 teaspoons thyme
  • 1 can of light beer
  • 5 teaspoons chicken broth
  • 400 milliliters of cream
  • 400 grams of cream cheese
  • 4 tea cups grated cheddar
  • 2 tablespoons cornstarch
  • 1 teaspoon black pepper
  • 1/2 cup chopped and fried bacon
  • 1/4 teaspoon chives for serving

Method of preparation :

Fry the vegetables in the oil, season with salt and let them simmer for 10 minutes until soft.

Add the chicken broth and thyme to the vegetables and mash.

Pour the beer and bring to a boil.

Add the cream, cream cheese and stir to dissolve. This will happen more easily if it has reached room temperature.

You should put the cheddar cheese in portions, adding the next one only after the first one has melted. Let the soup simmer for 5 minutes.

Season with salt and pepper. If the soup has large particles, you can blend it once more.

Serve in bread bowls, with toast or croutons, sprinkle with chives and pieces of fried bacon.
