How To Cook Spaghetti With Chicken, Tomatoes And Artichokes - Recipe

Required products :

  • 400 milliliters of broth - chicken
  • 1 can of 400 grams of tomatoes
  • 300 grams of chicken white meat, cut into pieces
  • 1/2 teaspoon white wine or water
  • 1 chopped garlic clove
  • 1/2 teaspoon dried oregano
  • 120 grams of thin spaghetti
  • 2 teaspoons baby spinach
  • 1/4 tea cup roasted red peppers (chopped)
  • 1/4 tea cup pitted olives
  • 1 stalk of green onion, finely chopped
  • 2 tablespoons parsley
  • 1/2 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper

Method of preparation :

In a large skillet, combine the broth, tomatoes, chicken, white wine, garlic and oregano. Add the spaghetti and let it cook for 5-7 minutes (during this time the meat and pasta will be ready).

Add artichokes, spinach, peppers, olives, onions, parsley, lemon juice and zest, olive oil and season with black pepper.

Cook, stirring, until the spinach is melted - about 3-4 minutes.

Serve and, if desired, sprinkle the dish with cheese.
