Required products :

  • 2 teaspoons olive oil
  • 40 grams of large breadcrumbs (or ground old bread)
  • 10 grams of finely chopped fresh parsley
  • 150 grams of wholemeal spaghetti
  • 2 cans of 120 grams of sardines, cleaned and drained of fat (keep only 2 teaspoons of it)
  • 1 small onion, cut into thin slices
  • 1/2 teaspoon hot pepper flakes
  • 40 grams of raisins
  • 3 tablespoons white wine
  • 20 grams of pine nuts
  • 1/2 lemon - peel and juice

Method of preparation :

Put olive oil in a pan and fry the breadcrumbs for 3 minutes until crispy and golden. Season with salt and pepper, add most of the parsley to it. Remove from the heat and set aside.

Boil the spaghetti, save about 1/4 cup of the liquid in which you boiled them.

Meanwhile, fry the onion together with the hot pepper in the sardine fat for about 8 minutes. Add the raisins and wine, cook for 1 minute to reduce the liquid.

Add the sardines and cedar nuts to the onion and cook for 2 minutes. Add the lemon juice.

Put the cooked pasta and the separated water in the pan, add the remaining parsley. Stir and cook for 1-2 minutes to combine flavors. Season and serve by putting some breadcrumbs and grated lemon peel in each portion.
