Required products :

salad:

6 cups baby spinach
1 cup cherry tomatoes, cut in half
1 cucumber, cut into circles
1/2 red pepper, cut into strips
1/4 red onion, thinly sliced
1 cup canned corn, drained

dressing:

3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
1/2 teaspoon Dijon mustard
pinch of salt

* A tea cup is used to measure the quantities.

Method of preparation :

Wash all fresh vegetables and chop them, then mix in a large bowl baby spinach, cherry tomatoes, cucumber, pepper, red onion and corn.

Make a dressing in a small bowl, mixing olive oil, balsamic vinegar, honey, mustard and salt.

Serve the salad and season with the dressing.
