Peel a squash, grate it and rinse it. Dry and set aside. Peel an onion and slice it. Stew it in hot oil and add the meat. Reduce the heat and cook under a lid for 15 minutes. Then add the potatoes, carrots, curry, salt and pepper. Stir and season with parsley and mint leaves. Pour the beer and simmer over low heat for an hour and a half. If liquid is needed, add a tea cup of warm water. In case you don't want a lot of broth, don't pour. Serve the dish warm, garnished with chopped fresh spices.
