How To Cook Stewed Meatballs In Vegetable Sauce With Ham And Olives - Recipe

Required products :

700 grams of minced meat mixture
2 eggs
4-5 cloves garlic
3-4 sprigs of fresh parsley
breading flour
salt and ground black pepper to taste

For the sauce:

50-70 grams smoked or salted bacon or pork breast
100-120 grams cooked-smoked ham
2 tomatoes
1 onion
150-200 grams pitted olives
1 tablespoon flour
500 milliliters meat broth
pinch cayenne pepper
salt and ground black pepper to taste
3 -4 tablespoons oil for frying
dill or parsley to taste

Method of preparation :

Put the minced meat in a bowl, add finely chopped parsley or dill to taste, crushed garlic cloves, eggs, season with salt and pepper. Mix well.

 

With wet hands, shape the meatballs, roll them in flour and put them in the fridge for a while.

 

Cut the bacon into thin slices, the ham into small cubes, and finely chop the onion.

 

Cut the tomatoes into small pieces.

 

Return to the meatballs. Take them out of the fridge and fry them in very hot oil until a light crust forms on all sides.

 

 

Remove to a plate and place the bacon in the same pan.

 

After 1-2 minutes, turn the pieces over and add the ham cubes.

 

Then add onions, tomatoes, season with a little cayenne pepper and add the flour.

 

Stir and pour the broth 4 minutes later. Stir and bring to a boil.

 

Then add the meatballs to the sauce and when it boils again, reduce the heat. Allow the dish to simmer for 25-30 minutes.

 

Meanwhile, rinse the olives and finely chop the parsley.

 

Add the olives to the meatball dish five minutes before removing from the heat.

 

Finally, sprinkle with chopped parsley and serve with a garnish of mashed potatoes.
