Required products :

  • 3 1/2 tea cups thinly sliced ​​leeks (about 3 pieces)
  • 1 large head of fennel, finely chopped
  • 4 tablespoons melted butter
  • 1 cup fresh milk
  • 2 egg yolks
  • 1 tablespoon flour
  • 1/2 cup finely grated Parmesan cheese
  • 1 puff pastry
  • 2 teaspoons poppy seeds

Method of preparation :

Stir in the fennel and leeks with 3 tablespoons of oil and bake at 225 degrees for 35 minutes until the vegetables are soft. Stir occasionally during baking.

Reduce the oven temperature to 210 degrees.

Mix the milk and yolks in a bowl.

Heat 1 tablespoon butter in a saucepan. Add the flour and stir for 1 minute. Carefully pour the milk with the yolks, stirring constantly. Allow the sauce to simmer for 3 minutes to thicken. Remove from the heat and add half the parmesan.

Mix with the roasted vegetables and season with salt and pepper.

Roll out the puff pastry into a rectangle and transfer to a pan. Make a board at the end and pour the vegetable mixture in the middle.

Sprinkle with remaining parmesan and poppy seeds. Bake until golden for about 25 minutes.

Serve the tart warm.
