That is why cooking in a pre-prepared broth will be an ideal option for preparing breasts. It is best to have a vegetable broth, as it has more aroma, vegetable flavor and a moderate dose of fat. But if it is not there, do not despair, you can cook the perfect soft breast without it.

Place the breast in boiling and already salted water (it should be chilled), cook over medium heat for about 10 minutes. Then remove the pan from the heat and let the chicken breast soak in the water for about 15-20 minutes, it will reach the maximum and retain all its juices.

 

How to fry chicken breast

In order to perfectly fry chicken breast, you need to know a few rules. The first thing to do is to beat off a piece with a hammer without spikes, it is better to wrap the meat with cling film beforehand, so it will become flatter and evenly fried. Be sure to marinate the breast in spices, you can make a marinade based on your favorite seasonings, soy sauce, lemon juice. Soy sauce and lemon perfectly soften the chicken breast fibers, and it remains soft after frying.

Another way to keep the juiciness is to fry the breaded breast in a large amount of butter. So it will not only retain its juices, the breading will not let them leak out, but it will also absorb the butter, which will only make it more tender. Fry the breast from 3-6 minutes, depending on the thickness. If you know that the piece is too thick and has not yet cooked inside, but the breadcrumbs or flour have already begun to burn, preheat the oven to 180 degrees, turn it off and send the breast there, after wrapping it in foil. It will not bake, but from the high temperature, which gradually drops, it will quickly reach and cook inside.

Ideally, the breast should be baked in a special package, the so-called "sleeve", with the addition of butter, cream, seasonings. Thanks to the butter and cream that the breast will certainly absorb, the meat becomes very tender and breaks into fibers right before your eyes. You can not bother with cream and a sleeve, but simply build foil boats, in which pieces of butter and spices are also added in large quantities. And for a wonderful aroma and additional flavor notes, we advise you to add sprigs of thyme and rosemary to the butter, which will definitely not leave anyone indifferent.
