Cut off the top of the tomatoes and carve the flesh with the juice and seeds using a teaspoon.
Dry the inside of the resulting bowls with paper and start making the filling.
Mix the fish with the chopped green olives, add the mayonnaise and season.
Fill the tomatoes with this mixture and garnish with onions, olives and thyme.
