Required products :

8 eggs
1 teaspoon yogurt
2 tablespoons freshly squeezed lemon juice
1 clove of garlic, grated
2 tablespoons olive oil
500 grams of raw sausage (use only the inside)
4 large tortilla cakes
1/2 small head of red onion, cut into crescents
4 pickles, sliced
1 large bunch of mint leaves

Method of preparation :

Boil the eggs, after they cool, peel them and cut into circles.

Mix the egg, lemon juice and garlic in a small bowl, season with salt.

Put olive oil in a pan and fry the sausage, chopping the meat. Remove the pieces of meat to a plate.

Spread the sauce on 1 tortilla bread, sprinkle it with pieces of sausage, arrange the slices of 2 eggs, followed by red onion, cucumber, mint leaves and roll up, closing the side edges.

Heat a frying pan and bake the tortillas on each side for 2 minutes to get a crispy crust.
