Required products :

  • 1/2 baguette
  • 1 clove of garlic, cut in half
  • 4-6 basil leaves
  • 170 grams of canned tuna
  • 3/4 cup Kalamata olives, pitted, sliced
  • 1/2 tea cup cut into thin sticks red pepper
  • 1/2 small onion, chopped
  • 1/4 teaspoon parsley
  • 1 can of 400 grams of artichokes, drained and chopped
  • 1/4 tea cup blanched green beans
  • 3 tablespoons fresh lemon juice
  • 6 tablespoons olive oil + more watering at the end
  • pinch of sea salt and pepper

Method of preparation :

First, cut the baguette lengthwise and carve the inside of the bottom half to make room for the filling later. Brush with olive oil and rub the bread with garlic.

Prepare the salad - in a bowl mix tuna, olives, peppers, onions, parsley, artichoke (optional), green beans. Mix well and add the lemon juice and a little olive oil.

Put the salad in the carved bread and sprinkle with parsley on top. It would be good, if you have time, to close the sandwich with the top crust and wrap in foil. Refrigerate overnight and serve the next day.
