Eggplant contains fiber, which helps to remove excess fluid from the body along with toxins. Also, eggplants are an indispensable product for those who want to lose weight, since 100 grams of this vegetable contains only 28 kcal. And although there are not so many vitamins in eggplant, this is offset by other beneficial properties.
In order to cook delicious eggplant dishes in winter, they can be dried. Then it will be enough to soak the dried eggplants for a while in water or milk, and cook in the usual way, adding to the first or second courses.
You can dry the eggplant with or without the skin, it's up to you. The drying process can be carried out outdoors in the sun, dried at home in an oven or a special dryer for vegetables. The latter option is very convenient, since a fairly large number of vegetables can be dried in a short period of time.
Recipes with blue eggplant
Step 1
To properly dry eggplant, we need a knife, a cutting board, an electric dryer and fresh eggplant.
Step 2
Wash and peel the eggplant.
Step 3
Cut the eggplant into small cubes. Make sure the cubes are more or less the same. This will help the eggplant dry at the same time and evenly.
Step 4
Arrange the eggplant cubes on the vegetable dryer racks.
Step 5
Dry until ready. This will take approximately 4-5 hours. Store dried eggplant in a dry, tightly closed container.
