Eggplants are quite popular among culinary specialists. They are baked, fried, stewed, caviar is cooked, added to the first and second courses, snacks. The fried eggplants are especially tasty. They are fried in cubes, circles, tongues, with skin and without skin, in batter and without batter, depending on how you want to use them later.

The main questions that arise when choosing a recipe for fried eggplants are: “Is it true that pre-salting eggplants allows you to get rid of bitterness, and the eggplants themselves after that, when frying, will absorb less sunflower oil?”. And also many are interested in whether it is worth removing the skin before frying eggplant ...

If the issue with the skin is very controversial: some people prefer to remove it, while others like to fry eggplant with the skin. The question is: is it worth salting eggplant slices before frying, it does not cause controversy. Pieces pre-treated with salt really stop bitter (if they were bitter before, which very much depends on the variety) and absorb less oil when frying.

Eggplant slices can be salted in two ways:

- sprinkle them with salt, and after 15-20 minutes peel off this salt with the resulting juice;

- soak eggplant slices in salted water for 20-30 minutes, and then squeeze well.
