And at the same time, everyone was faced with such a situation that one hostess has tender, tasty cheesecakes, while the other is not at all like that. Sometimes young housewives have a question: should I add baking powder, semolina, honey to syrniki? What oil to fry? On what fire? Should I cover the pan with a lid when frying cheesecakes? It turns out that there are some features that must be considered when cooking:
- for the preparation of cheesecakes, choose only fatty, tasty, non-acidic and non-wet cottage cheese. Properly chosen cottage cheese is already half the success;
- be sure to wipe the cottage cheese through a sieve or chop with a blender, meat grinder;
- there is no need to add too many eggs to the dough and there is no need to add soda, baking powder at all;
- Do not add too much flour or semolina to the dough. This will cause the cheesecakes to become hard;
- Fry cheesecakes in a thick-walled pan. The best choice is a cast iron skillet;
- it is best to fry cheesecakes in vegetable oil;
- before laying the cheesecakes in the pan, heat it well;
- lay out the cheesecakes in the pan so that there is free space between them;
- the dough for making cheesecakes should not be liquid or dense. The consistency of the dough should resemble a dense curd mass.
Recipes with cottage cheese
Step 1
For work, we need cottage cheese - 250 grams, 1 egg, flour - 2 tbsp. l., semolina - 1 tbsp. l., salt - 0.3 tsp, sugar - 1 tsp, sunflower oil - 50 ml, bowl, frying pan, spoon.
Step 2
Properly chosen cottage cheese is half the success in preparing delicious cheesecakes. Choose cottage cheese fat, fresh, tasty, non-acidic, without foreign odors, not wet.
Step 3
Flour and semolina. If desired, you can add both flour and semolina to the dough. With semolina it will turn out more airy and tender than with flour. But in any case, for 250 grams of cottage cheese, take 1-2 tablespoons of the selected product for the test. Increasing the amount of flour or semolina will make cheesecakes tough.
Step 4
Egg is an essential ingredient in cheesecakes. But don't get carried away with the amount of eggs you add to the dough. For 250 grams of cottage cheese, take 1 egg. An increase in the number of eggs in the dough will lead to the fact that in order to give the dough the right consistency, you will have to add excess flour, which will immediately lead to the fact that the cheesecakes will become hard.
Step 5
Pan. Fry cheesecakes in a thick-walled pan. The frying pan should be well heated before cheesecakes are laid out in it. It is best to fry cheesecakes in vegetable oil. Oil should be sufficient.
Step 6
Be sure to wipe the cottage cheese before preparing the dough. You can pass the cottage cheese through a meat grinder or chop with a blender.
Step 7
When preparing the dough, simply grind all the ingredients until smooth (the flour from this recipe is used for dusting and forming cheesecakes, it is not included in the dough).
Step 8
It is very important that the consistency of the dough resembles a thick curd mass.
Step 9
On the kitchen board, distribute the flour and with a spoon, in portions, lay out the curd mass.
Step 10
Form round cakes. They don't have to be thick. Height is about 1 cm.
Step 11
Put the cheesecakes on a well-heated pan with a sufficient amount of vegetable oil. There must be free space between the cheesecakes. Fry cheesecakes over medium heat until golden brown on both sides. It is better to fry under the lid.
Step 12
The cheesecakes are ready. Serve hot with sour cream and jam.
