Beef burgundy is one of the most delicious dishes that is ideal for a large family feast, and will definitely appeal to even the most avid culinary gourmet. The meat is very juicy, soft and just melts in your mouth. And the best part is, it's easier to make than you think.
To make beef burgundy you will need:
- 1.5 kilograms of beef (you can even take it with streaks, because thanks to several stages of heat treatment, it will still turn out soft);
- a few tablespoons of vegetable or olive oil;
- 1 large red onion;
- 3 teaspoons of flour;
- 1.5 cups of red wine (better to use dry);
- 2 medium-sized carrots.
- 2-3 cloves of garlic;
- herbs, salt, pepper, herbs to taste.
Cut the meat into medium pieces. Take a high frying pan and fry the beef in oil until golden brown. Don't worry if the meat isn't cooked inside, it will come through during the stewing process.
Remove the meat from the pan and fry the chopped onion and garlic in the same place. As soon as the onion turns dark golden, add flour to it, mix and pour into the wine. If you do not want to feel the tart, spicy notes of the drink, let it evaporate a little and fry for another 5 minutes before adding the meat.
After the wine, place the beef with the diced carrots in the pan. At this stage, it is worth salting, peppering well, adding greens and herbs. For flavorful Burgundy beef, we recommend adding a few sprigs of thyme and rosemary, as well as a couple of tablespoons of olive oil. They will give their unforgettable aroma and spicy notes. After adding spices, pour the meat with cool boiled water so that it covers the meat by about 1 centimeter. Close the lid of the pan and simmer the meat for about 2-2 and a half hours. Remember to stir every 20-30 minutes.
When the meat is cooked, remove the sprigs of thyme and rosemary, and you can serve. Rice, mashed potatoes and stewed lentils will be an ideal side dish for Burgundy meat.
