Canned Vegetables - As Useful As Fresh

The canning process itself makes the fiber more soluble in foods such as legumes.

Canned foods are as good as fresh or frozen foods , and in some cases are even better choices according to a new study. 
 
Researchers from the University of Michigan, USA, found that canned tomatoes contain more B vitamins , as well as lycopene - carotene, which is associated with a reduced risk of cancer. 
 
The canning process itself makes the fibers more soluble in foods such as legumes, thus increasing the nutritional quality of the food. Canned vegetables are also a cheaper option than fresh or frozen ones. 
 
The experts analyzed the nutritional qualities of eight types of vegetables and ten types of fruits, comparing songs, frozen and canned. The conclusions are that in all their forms vegetables provide the same nutritional qualities, and if the financial cost is added to the criteria, the recommended choice is canned products.
 
 
 
As the world's population grows, canned vegetables could provide cheaper and safer access to healthy food, the researchers concluded. However, they still cannot say whether canned products with a high salt content are not a suitable choice for some people. 
 
The study is published in the American Journal of Lifestyle Medicine .
