Tartaric acid is an antioxidant. Participates in the process of regulating acidity, belongs to the group of substances that maintain alkaline pH.

In appearance, tartaric acid is a colorless crystal with a strong sour and slightly astringent taste. E 334 is found mainly in grapes and some other fruits, refers to natural compounds, is involved in the metabolism of the human body.

Tartaric acid is obtained from various waste raw materials from wine production, rarely from fresh fruit.

Use

The additive E 334 is used in various industries:

  • In the food industry - to regulate the acidity in canning, in the production of jellies, jams, candies, soft drinks and more. The substance preserves the color of the products, protects them from oxidation, prevents deterioration of taste over time. The acid is also used in winemaking.
  • In pharmacy - often used; with the help of the substance soluble and effervescent drugs, colorants are obtained.
  • Chemical laboratories identify aldehydes and sugars thanks to tartaric acid.
  • In cosmetics, the substance is used in the preparation of lotions, creams, face and body masks, added to shampoos and hair conditioners and more.
  • In the textile industry - used for dyeing fabrics and fixing colors.
