The food additive E 340 is used as a stabilizer, swelling agent, humidifier, acidity regulator. It is a white crystalline or granular powder; it can also be a colorless, odorless crystal, slightly hygroscopic.

The substance is obtained by the reaction of phosphoric acid with potassium carbonate or potassium chloride. Hygiene standards allow a maximum daily dose of 70 mg / kg. It is allowed to add a large amount in processed cheeses and their derivatives, in pastry and bakery products, in baking soda, in beverages; bases containing vegetable proteins - 20 g / kg; in powdered sugar, salt, dried egg products - 10 g / kg.

Use

Potassium phosphate is used in baking powder, in powdered milk and cream - as a stabilizer, along with other phosphate additives - in processed cheeses. It is also added to soft drinks and those for athletes who are mineralized artificially; in dairy products (ice cream, condensed milk, sterilized milk, concentrated milk with a dry matter content of less than 28%, all milk-based beverages, fresh cheeses); in flour, desserts, broths and soups, syrups for decorating milkshakes; in dry appetizers, in unprocessed fish and fillets, in meat products, etc.

The additive E 340 is an integral part of detergents (shampoos, soaps) in order to soften the water. In medicine it is used for the treatment and prevention of hypophosphatemia.

Impact on humans

The substance causes irritation of the gastrointestinal tract, is believed to cause cancer and affect blood cholesterol levels.
