E 381 is a reddish-brown or green powder or granules with a faint odor of ammonia and a metallic taste. It is obtained by the reaction of iron hydroxide with an aqueous solution of citric acid and ammonia. Depending on the concentrations of the substances, different types of iron ammonium citrate are distinguished . The brown supplement contains about 9% ammonium ions, 16-18% iron and 65% citric acid. The green solution is characterized by about 7.5% ammonia ions, 14-16% iron and 75% citric acid; it melts in the air and decomposes in sunlight, so it is stored in tightly closed containers, in cool and protected from direct light. The solubility in water is good and does not dissolve in alcohol.
The supplement belongs to the group of antioxidants and acidity regulators. It can be used as a chemical analogue of dough leavening agents. In some European countries it is allowed to be used in the production of carbonated soft drinks.
Iron ammonium citrates are used in the manufacture of medicinal products and feed additives for animals.
E 381 has a low degree of toxicity in small concentrations. If the doses are high, poisoning may occur, the first signs of which are: diarrhea, vomiting, black stools, pink urine. Inhalation of dust from the substance may cause irritation of the upper respiratory tract; in case of contact with skin and mucous membranes - slight inflammation and redness.
People with skin, eye, liver and kidney diseases should avoid contact with the supplement.
Iron ammonium citrates are dangerous for the environment.
