Characteristic

Magnesium chloride is found in nature in the mineral bischofite, in seawater and in the water of saltwater lakes. The additive is colorless, odorless granules, flakes, crystals and lumps. It dissolves quickly in air, dissolves well in water and ethanol.

Use

First of all, E 511 is used in the food industry as a hardener. In some products it is added as a substitute for salt. It can often be found in the composition of canned cucumbers, tomatoes, fruits, corn, berries, green peas. The substance prevents the product from softening. Magnesium chloride is often a nutrient medium for yeast. E 511 is added to some baby foods and soft drinks.

In Japan, magnesium chloride is used to cross soy milk to make tofu cheese.

Impact on humans

It has a number of useful properties for humans. In particular, the mineral bischofite has been widely used in medicine as a means of external application in the treatment of diseases of the musculoskeletal system, nervous system and problem skin.
