Taumatin is a powder with a cream color, no odor, the taste is pronounced sweet, several hundred times stronger than sucrose. The peculiarity of the substance is that its sweetness is not felt immediately, but some time after use (therefore in the food industry it is used in combination with other sweeteners). Taumatin dissolves well in water and is completely insoluble in fatty solvents. E 957 is found in nature in the ripe fruit of the bush maranthaceae (thaumatococcus danielli), growing in Africa. In the human body, the substance is broken down just like other proteins. Its use does not lead to adverse effects.

Use

In the food industry, taumatin is used mainly for sweetening confectionery (based on cocoa), in the manufacture of candied dried fruit, confectionery, ice cream (all of which are sugar-free or low-calorie products). The additive E 957 is a part of chewing gums, biologically active additives. Based on it, food sweeteners are produced for people suffering from diabetes and obesity. In addition, the substance can be found in soft and low-alcohol beverages. In small quantities, tuamatin acts as a means of enhancing the taste and aroma of products.

The additive is also used in pharmaceuticals. It is part of medicines, syrups, tablets and dragees, vitamin combinations for children.
