It is necessary to clean the mushrooms immediately after harvesting, and it is advisable to immediately process them: dry, freeze, or cook a dish.
When cleaning chanterelles, remember some nuances:
- first, sort the mushrooms by hand, discarding all large debris, leaves and twigs that got there during assembly from a bucket or basket;
- dip the mushrooms in a large amount of cold water and rinse well;
- if necessary, change the water several times;
- chanterelles are cleaned carefully, as these are rather fragile mushrooms;
- pay special attention to the "gills" under the hat. Dirt can accumulate there, which also needs to be cleaned before frying;
- Process the peeled mushrooms immediately further.

Step 1
For work, we need chanterelles, a knife, a clean kitchen sponge, a colander.
Step 2
Mushrooms need to be sorted out, removing large debris. Dip the chanterelles in a large amount of cold water and rinse well. If necessary, you can quickly change the water several times.
Step 3
Pay special attention to the "gill" under the cap. Rinse the "gills" under running water.
Step 4
Wipe the cap with a sponge, removing all dirt.
Step 5
Cut off the tip of the stem, refreshing the cut. Then you need to cut out all the spots with a knife.
Step 6
Rinse the mushrooms again under running water. Peeled chanterelles are ready to go.
