Russula found in the forest should preferably be collected immediately, after cutting, in a separate basket. If you put them in a common basket with other mushrooms, they will quickly wrinkle, break and look unpresentable.
If russula grew on moss, it is enough just to wash them at home and can be used for cooking. In other cases, it will be correct to thoroughly clean the mushrooms from sand, earth, needles after harvesting and only then rinse gently.
Russula can be boiled, fried, stewed or used to make soup.
Recipes with russula ingredient
Step 1
For work, we need russula (300-400 grams), a colander, a knife, paper napkins.
Step 2
Cut off the tips of the legs of mushrooms with adhering sand and earth.
Step 3
Check if we got a wormy mushroom. This is very clearly visible on the cut legs. It is better to throw away the affected mushrooms.
Step 4
Lightly scrape the hat and leg with a knife, removing adhering debris. It is also necessary to quickly go over the tubular layer with a knife, as dirt often collects there. Then wipe the entire mushroom with a paper towel, removing small debris.
Step 5
If desired, you can peel the mushroom cap from the skin. To do this, hook the edge of the film with a knife and pull it to the center of the cap.
Step 6
Put the mushrooms in a colander and rinse thoroughly under running water.
Step 7
Russula are ready to work.
