Cutting vegetables to the right size is very important when using more than one type of plant. Be careful when mixing hard vegetables such as potatoes, carrots, Brussels sprouts and onions.
The longer it takes to prepare the product, the smaller pieces it should be cut into. So when you cut sweet potatoes and peppers, the pieces of the former should be smaller. This will ensure that all the vegetables are cooked at the same speed.
For the best baking, be generous with the fat. Extra virgin olive oil is a good choice. Instead of watering the vegetables in the pan, it is better to mix them with your hands in a bowl to distribute the oil evenly over them.
To get crispy vegetables with a golden crust, put the vegetables to bake in a hot oven (preheated to 200 degrees). And if you decide to cook them in a pan, it should be very hot, which helps the vegetables to toast instead of mashing.
Do not overfill the pan with vegetables. If you do, they will begin to evaporate from the evaporation of the water contained in them. Instead, leave a little space between the pieces so that hot air circulates between them, providing you with crispy and toasted vegetables on all sides.
