American pancakes differ from the traditional ones in our country in that they are thicker and look like small cakes, not like the Bulgarian pancakes spread all over the pan.
The American version is very tasty and fluffy, but to make it really perfect, there are some secrets that we will now reveal to you.
Excessive mixing of the dough is one of the biggest mistakes people make. No one wants to come across a large lump of flour, but breaking it into lumps the size of a pea is enough to make pancakes.
Unlike making a cake, when you make pancakes, the butter, eggs and milk must be cold. Warm products can activate chemical reactions and make pancakes light and elastic prematurely.
The next time you make American pancakes, take the milk and eggs out of the fridge just before putting them in the bowl.
When baking pancakes in a pan, do not put fat in it, because it gives a crispy fried crust to the dough, which does not fit the perfect pancake. Instead, if the use of oil is urgent, using kitchen paper, grease the bottom of the pan well. This way you do not use excess fat, and the pancakes will turn easily.
The pan must be heated to 170 degrees - ie. medium hot. Wait a few minutes for the pan to heat up well before you start baking the pancakes.
You probably know that you have to watch the pancake and turn it over as soon as bubbles form. But that's not the only sign that it's time to bake it on the other side. When the edges start to swell and form an edge, as soon as the first bubbles appear, turn the pancake.
If you're waiting to see a lot of bubbles, you'll probably toast the pancake.
Before adding anything to the pancake batter, think about how much moisture this will put in your batter. If it is more liquid, it will be harder to turn. A good option is to put various additives, such as fruit, after making the pile of dough in the pan.
You can make all the pancakes and store them in a preheated 60 degree oven so that you can serve them all at once, but this will make them firmer.
If you want to serve at the same time, it is better to make smaller pancakes so that you can bake more in the pan at the same time.
