Required products :

  • 2 eggs
  • 1 cup light brown sugar
  • 1 cup dark brown sugar
  • 1 and 1/2 cups butter (or shortening)
  • 1/2 cup honeydew (molasses)
  • 4 and 1/2 cups flour
  • 3 tablespoons cinnamon powder
  • 2 teaspoons ginger powder
  • 1 teaspoon ground cloves
  • 4 teaspoons baking soda
  • 1/2 teaspoon salt
  • sugar for garnish

* A tea cup is used to measure the quantities.

Method of preparation :

In a bowl, beat the eggs, sugar, butter and honey. Sift the flour, cinnamon, ginger, cloves, baking soda and salt into another bowl.

Gradually add the flour mixture to the egg, stirring constantly. Cover and cool the resulting dough, then form it into small round biscuits.

Dip the tops of the biscuits in the sugar and place on a lightly greased baking tray with the sugar facing up. Slightly press the tips down with a fork to level. Optionally, sprinkle each biscuit with a few drops of water to obtain a more cracked surface after baking. Bake in the oven at 180 degrees for 10 minutes. Cool and serve.
