Caribbean cuisine has always surprised with atypical combinations. This recipe is also the same - it partners with couscous, black beans, mango and other ingredients. The result is unique!

Required products :

  •  1 1/4  tea cup water
  •  1 cup couscous
  •  1 can (400 grams) black beans, drained
  •  2 teaspoons fresh spinach, finely chopped
  •  1 red pepper, cleaned of seeds and finely chopped
  •  1 peeled and sliced ​​mango
  •  1/4  tea cup green onions, finely chopped
  •  1/4 teaspoon vinaigrette salad dressing (or similar)

Method of preparation :

Put the water in a saucepan and bring to a boil. Remove from the heat and pour in the couscous. Cover the pan and leave for 5 minutes. Remove from the pan, stir and allow to cool to room temperature for 10 minutes.

Put the couscous in a large bowl. Add beans, spinach, peppers, mangoes and green onions. Mix all the ingredients, then add the Vinegar sauce.

Serve the finished salad immediately or leave to cool in the refrigerator. Enjoy your meal!
