Method of preparation :
Roast the chicken livers in a pan greased with olive oil. Season with ground black pepper and salt.
Mix olive oil with honey, mustard and Provencal herbs.
Cover the bottom of the plate with fresh spinach leaves, on which put the chicken livers, chilled and cut into pieces. Add sliced apples and pour the sauce over the salad.
