Required products :

  • 1/2 tea cup slightly warmed milk
  • 1 tablespoon sugar (for yeast)
  • 1 packet of dry yeast
  • 1 teaspoon cooking cream
  • 3 1/2 teaspoons flour
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon cardamom (ground)
  • 1/2 teaspoon butter
  • 220 grams of almond paste for marzipan
  • 1/2 cup crushed almonds
  • 1 teaspoon cinnamon
  • 1 teaspoon almond extract
  • 1 beaten egg white
  • 1/2 teaspoon filleted almonds

Method of preparation :

In a small bowl, mix 1 tablespoon of sugar and milk. Sprinkle with yeast and leave for 10 minutes to swell.

In another bowl, mix the flour, 1/4 teaspoon sugar, salt and cardamom. Cut the butter into cubes and add it to the mixture. Rub with your fingers to become crumbs. Add the yeast, cream and mix to combine. Wrap the dough in foil and store in the refrigerator for 12 to 24 hours.

Prepare the filling - mix the almond marzipan paste with the crushed almonds, 1/2 tea cup of sugar, cinnamon and almond extract. Stir with a mixer, the mixture will be slightly crumbly.

Roll out the dough into a long strip 5 cm wide and 50 cm long.

Sprinkle with the filling, keeping the edges clean. Then sprinkle your plate with sugar and roll. Extend the finished roll as much as possible, then roll it into the desired shape.

Brush with egg and sprinkle with almonds. Cover with a clean towel and leave to rise for 45 minutes.

Preheat oven to 190 degrees and bake for 20-25 minutes.

Allow the Easter cake to cool, then serve sliced.
