Required products :
2 kg of eggplant
500 grams of sweet peppers
3 large onions
3 large carrots
1 garlic clove
1 bunch parsley
1 teaspoon oil
spices of your choice and to taste
4 tablespoons sugar
1 tablespoon salt
150 milliliters of vinegar
Preparation :
Wash the aubergines, cut their tails and boil whole in salted water for 7-10 minutes. Wait for them to cool, drain the liquid, peel them and cut into large pieces.
Wash the peppers, remove the tails and seeds, then cut into straws.
Grate the carrots with a large grater, peel the onion and cut into circles.
Finely chop the garlic and parsley (you can also mash the garlic with a press).
Mix all products in a suitable container, pour the oil, vinegar, add salt, sugar and add other spices you prefer. Leave the salad to stand overnight, stirring several times during this time.
Store in the refrigerator.
