Required products :

  • 4 fillets of tilapia / or other fish of your choice /
  • 4 tea cups cherry tomatoes, halved
  • 1 teaspoon olives, boned and finely chopped
  • 1/2 tablespoon oregano, dried
  • salt and freshly ground black pepper to taste
  • chopped fresh parsley

Method of preparation :

  • In a large skillet, sauté the cherry tomatoes in 1 1/2 tablespoons olive oil over medium heat for about 4-5 minutes.
  • Season with salt and pepper to taste.
  • Add the garlic and after about 1 minute remove the pan from the heat.
  • Add the oregano and chopped olives and stir.
  • Grease the bottom and walls of a rectangular yen glass and pour the tomato mixture into it.
  • Arrange the fish fillets and sprinkle with olive oil, salt and pepper to taste.
  • Bake in a preheated 180 degree oven for about 20-25 minutes or until the fish is completely cooked.
  • Garnish with parsley and serve.
