How To Cook Ice Cream Sandwich With Ginger And Blackberries - Recipe

Required products :

  • 2 1/2 teaspoons blackberries
  • 2 tablespoons grated ginger
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • pinch of salt
  • 5 tea cups of softened vanilla ice cream
  • 16 graham crackers

Method of preparation :

Line a square tray with 16 cm sides with two pieces of baking paper, which you place crosswise so that the edges protrude from the tray.

Cut 1/2 cup of blackberries and set aside.

Mix the remaining 2 cups with the ginger, lemon juice, maple syrup and salt. Grind in a blender until smooth. Strain through a sieve, pressing with a spatula or spoon so that you can separate the main seeds and keep more of the puree.

Mix the fruit puree with the melted ice cream and mix well. Transfer to the prepared pan, sprinkle with chopped blackberries and cover with another sheet of baking paper. Press, this will remove the air bubbles, if any. Put in the freezer for 2 hours.

Remove the ice cream with the help of paper and cut it into small rectangles. Glue a pea cracker on both sides to make a sandwich.
