How To Cook Lemon Chicken With Fresh Potatoes And Garlic - Recipe

Required products :

  • 2 lemons, squeezed and cut into slices
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, pressed or finely grated
  • 1 tablespoon dried thyme
  • 3 tablespoons melted butter
  • 1 tablespoon olive oil
  • 800 grams of small fresh potatoes, halved
  • 1 whole chicken
  • salt and pepper to taste

Method of preparation :

  • Preheat oven to 220 degrees.
  • In a small bowl, mix the lemon juice, salt, pepper, garlic, thyme and melted butter. Stir.
  • Heat olive oil in a large skillet over medium heat and sauté the fresh potatoes in it for about 7-8 minutes.
  • Add 1 tablespoon of the lemon mixture and the lemon slices and stir.
  • Transfer the potatoes to a pan and place the chicken in the center.
  • Carefully peel the skin from the thighs and breasts without removing it and rub the lemon-oil mixture.
  • Cover the pan with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for another 40 minutes.
  • Let the roast chicken rest for about 15-20 minutes before cutting it into portions.
  • Garnish with fresh potatoes and serve.
