How To Cook Mushroom Pate With Cognac, Thyme And Garlic - Recipe

Required products :

  • 2 tablespoons dried wild mushrooms
  • 400 grams of mushrooms
  • 1-2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon thyme
  • 2 tablespoons cognac
  • 200 grams of high-fat sour cream
  • salt and pepper


Method of preparation :

Crush the dried mushrooms in a mortar. Peel the garlic and onion, cut them into small cubes and fry until soft and golden (in 1-2 tablespoons of olive oil).

Wash the fresh mushrooms and cut them into small cubes. Add them together with the dried wild mushrooms to the mixture of hot vegetables and mix thoroughly.

Reduce heat to low and simmer for 5-7 minutes.

During the heat treatment, the fresh mushrooms will release a liquid in which the dried ones will be prepared.

Season with a pinch of salt, a little black pepper and a teaspoon of thyme (of course, you can use quantities to your liking). Finally, pour the cognac and stir.

Cook the mushrooms until all the liquid in the bowl has evaporated. Then grind the thick mixture in a blender while still hot. Combine it with the cream and mix again until smooth.

Heat a little pate to evaporate the liquid from the cream and you can serve.
