Required products :
200 grams of mushrooms of your choice
1 medium bunch parsley
500 milliliters of fresh milk
100 grams of butter
3 tablespoons flour
lemon juice
salt and freshly ground white pepper to taste
Method of preparation :
Cut the mushrooms into small pieces, put them in boiling salted water for 5 minutes, then drain the liquid with a colander.
Sprinkle the mushrooms with lemon juice and fry over high heat in 2 tablespoons of oil for about 3-4 minutes. Remove from the heat.
Cut the parsley leaves (remove the stems) as finely as possible (literally powder).
Melt the remaining butter in a suitable pan and fry the sifted flour in it over medium heat for 2 minutes. Gradually pour in the milk, stirring to avoid lumps. Let the mixture cook for 4 - 5 minutes, add the mushrooms and parsley, cook on low heat for 3 minutes. Add salt and white pepper.
The sauce is ready. Serve warm.
