Required products :

  • 7 large eggs
  • 230 grams of frozen spinach
  • 1 teaspoon cheese
  • 3/4 tea cup grated yellow cheese
  • 100 grams of melted butter
  • 6 sheets of pastry crust
  • salt and pepper to taste

Method of preparation :

 

  • Thaw the spinach according to the instructions on the package and let it drain.
  • Mix the cheese and yellow cheese in a bowl and season with salt and pepper.
  • Add spinach and 1 egg to them and mix well to combine.
  • Grease the bottom of a rectangular pan with some of the melted butter. Line with 1 of the pastry crusts, grease it with oil and repeat with 2 more crusts so that you have a total of 3 crusts for the base.
  • Spread the spinach mixture evenly on top, forming 6 nests.
  • Separate the yolks from the whites.
  • Using a spoon, form a bed on each of the nests and carefully place 1 egg yolk.
  • Beat the egg whites and spread them over the spinach mixture.
  • Carefully cover with 1 of the pastry crusts, grease it with oil and repeat with the other 2 crusts, pressing them lightly together at the end.
  • Use a sharp knife to cut the pie into 6 pieces.
  • Bake in a preheated 200 degree oven for about 20-30 minutes, until the crusts are slightly browned at the end.
