Method of preparation:
Melt the butter and heat it. Cut the mushrooms into small pieces and fry them. Add the finely chopped plain and sweet potatoes, onion, pepper, add the spinach and season with salt and pepper.
Stew the mixture on low heat for 30 minutes, during which time fry the eggs in a hot dry pan, lightly greased.
When the vegetables are ready, sprinkle the dish and garnish with fried eggs and chili sauce to taste. Serve and eat with pleasure.
