Required products :

  • 1 cup red lentils
  • 3 tomatoes
  • 1 stalk of leek
  • 50 grams of sour cream
  • 1 clove garlic
  • 1 handful of coriander leaves
  • 1.5 liters of vegetable or chicken broth
  • 3 tablespoons olive oil
  • 1 teaspoon sugar
  • 0.5 teaspoon cardamom seeds
  • 0.5 teaspoon cumin seeds
  • 0.5 teaspoon turmeric
  • a pinch of saffron
  • left

 

 

Method of preparation :

Make cross-cuts on the surface of the tomatoes, put them in a deep bowl, pour boiling water and after a while rinse with cold. Peel the skins and cut the red vegetables into small pieces.

Cut leeks into circles, crush the cumin and cardamom seeds.

Mix the spices and heat them on the stove for 30 seconds.

Fry the chopped leeks in 2 tablespoons of olive oil over low heat. Add the chopped tomatoes and stir. Mix the remaining olive oil with the turmeric and add to the spices. It's time for a teaspoon of sugar, add it, then mashed and finely chopped garlic.

Pour the lentils into the bowl with the vegetables, pour the hot broth, the spice mixture and cook the soup until ready.

When cooked, add salt to taste, saffron and a few minutes later remove the pan from the heat.

Sprinkle with chopped coriander and serve with sour cream.
