Method of preparation :
Roast the peppers and aubergines.
Cut the aubergines into cubes.
Peeled peppers - in random pieces.
Mix the two vegetables in a bowl and pour over the olive oil.
Slice the parsley.
Chop the arugula / spinach with your hands as for a salad.
Add to the bowl and add salt. Add the garlic.
Stir and the salad is ready.
You can serve it as a side dish to meat.
