If you have leftover chicken from pre-cooking, you can include it in this interesting and delicious salad with couscous and oranges. The ingredients are for 2 servings and the preparation will take about 30 minutes .

 

Necessary products

  • 50-60 grams of cooked chicken
  • 2 large handfuls of couscous
  • 3 oranges - 1 whole and 2 squeezed juice
  • juice of 1 lemon
  • 1 stalk of green onion, finely chopped
  • 1 handful of fresh basil leaves
  • 2 tablespoons olive oil
  • salt and pepper to taste

 

Method of preparation

Pour the couscous into a bowl and pour boiling water over it to cover completely. Leave to stand for about 15 minutes, then drain.

In another bowl, mix the lemon juice, orange juice and olive oil. Season with a little salt and pepper. Pour the finished dressing over the couscous and leave it for 10 minutes.

Meanwhile, peel the other orange and cut it into large pieces. Add them to the couscous together with the chicken. Add basil and green onions. Stir all ingredients lightly.

Serve the finished salad in suitable plates. Enjoy your meal!
