A wholesome breakfast is very important for a good start to the day. When it is well balanced, it will give you satiety until noon and will charge you with energy. This one is just that - protein and very tasty - with sausage, sweet potatoes that are low in carbohydrates and the best breakfast product - eggs. If you prepare preparations from the night before, you can make a great breakfast in 15 minutes.

Required products :

  • 220 grams of smoked sausage, cut into cubes
  • 1 tablespoon olive oil
  • 1 large red pepper, finely chopped
  • 1 onion, chopped
  • 2 chopped garlic cloves
  • 500 grams of sweet potatoes, cut into cubes
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 tablespoons parsley
  • pepper

Method of preparation :

Heat a frying pan and fry the sausage for 2 minutes until browned. Add onion and pepper, and when soft, add potatoes, garlic and 1 tablespoon olive oil, salt. Cover with a lid and simmer for 10 minutes, until the potatoes are soft. Stir.

Beat the eggs on the potatoes and cover again with the lid for another 5 minutes until cooked through.

Sprinkle with parsley and black pepper.

Serve immediately to enjoy the hot dish.
