Required products :

for the base:

1 cup raisins
2 tablespoons dark or light rum
1 cup wholemeal flour
1/2 teaspoon grated nutmeg
1/2 teaspoon salt
450 grams of sweet potatoes, boiled and peeled
3 large eggs
1 can of light coconut milk
1 cup brown sugar
2 tablespoons melted butter

for the sprinkler:

1/2 cup unsweetened coconut shavings
2 tablespoons brown sugar
pinch of cinnamon powder

Method of preparation :

Turn on the oven to preheat to 180 degrees. Grease a falling pan with grease of your choice.

Combine the raisins and rum and let stand. In another bowl, mix the flour with the nutmeg and salt.

Mash the sweet potatoes, add the eggs and beat with a mixer until mixed. Stirring constantly, add the coconut milk, brown sugar, butter and dry ingredients until a smooth dough is obtained. Pour the raisins and rum, mix and spread the resulting dough in the prepared pan.

Combine the coconut shavings, brown sugar and cinnamon and sprinkle with the cake.

Bake for 60-80 minutes or until done. Cool to room temperature for 1 hour and cut into pieces.

Serve the sweet potato cake with yogurt if desired.
