Wash, dry, cut the eggplant into circles and add salt. Heat olive oil in a pan, beat it in flour and fry on both sides.
Drain on kitchen paper and arrange in a salad bowl. In a bowl, chop the tomatoes, cucumbers, onions, fresh spices and add the chickpeas. Season with olive oil, salt and balsamic vinegar.
Stir and spread the vegetables on the fried eggplant. Cool and serve the salad, garnished with a sprig of fresh parsley.
