How To Cook Wholemeal Blocks With Raspberries - Recipe

Required products :

For the blocks :

  • 1 cup oatmeal
  • 1 cup walnuts
  • 1 1/4 teaspoon pitted dates
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

For the raspberry topping :

  • 1 cup fresh raspberries
  • 1 teaspoon honey
  • 1 teaspoon lemon juice, freshly squeezed
  • 1 tablespoon chia seeds

Method of preparation :

 

  • Blend the raspberry topping ingredients in a blender until smooth.
  • Transfer to a bowl and let rest for about 15 minutes to thicken.
  • Rinse the blender and puree the oatmeal until coarse.
  • Add the walnuts, vanilla extract and salt.
  • Turn on the blender and start adding the dates one by one without turning it off.
  • Pour 3/4 of the mixture into a square shape measuring about 20 centimeters and press well.
  • Spread the raspberry topping on top and sprinkle with the remaining 1/4 of the mixture.
  • Cover the form and store it in the refrigerator for at least an hour.
  • Cut into blocks and serve.
